SATURDAY WAS ONE OF THOSE PERFECT NEW YORK AUTUMNAL DAYS WHICH HAPPEN MORE FREQUENTLY IN OUR IMAGINATION THAN IN REALITY.
Dom and I drove up to New York City on Saturday and went to the Farmer’s Market in Union Square. The amount and variety of produce was almost overwhelming. So many different things to feast your eyes on. There were six varieties of radishes, probably 20 varieties of tomatoes and carrots in every color of the rainbow,
We settled on these darling little eggplants –
They were just cutest things ever and on Sunday made a delicious dinner –
Slice the eggplant in half and drizzle with olive oil.
Top each piece of eggplant with pesto and put in oven at 375 degrees for approximately 40 minutes.
Remove from oven and put a dollop of tomato sauce onto each piece and dust with shaved mozzarella cheese.
Put back in the oven for an additional ten minutes.
Enjoy,
Bernadette
Thanks so much for sharing inviting word-images and photos! Look forward to trying your recipe…Funny (not really!) as a child I literally could not hold eggplant down, as an adult, I love it!
